Plumming
apple and plum kuzu compote

Ingredients

✓ 3 semi-sweet or sweet apples
✓ 8 plums
✓ 1/2 cup organic apple juice
✓ extra 1/4 cup organic apple juice
✓ 1/2 cup spring water
✓ pinch of unrefined sea salt
✓ 2 tablespoons ginger juice from freshly grated ginger
✓ 2 tablespoons kuzu
✓ dessicated coconut

Procedure

❦ Slice apples into thin wedges
❦ slice plums into quarters.
❦ Grate ginger and squeeze put the juice
❦ Place apples in a saucepan with the apple juice and water
❦ add a pinch of salt
❦ Bring to the boil and simmer for five minute
❦ Add plums to the simmering apples and cook until just softened.
❦ Pour in ginger juice
❦ Dilute the kuzu in remaining apple juice
❦ add to the simmering fruit
❦ Turn the flame a little higher
❦ Stir the kuzu through thoroughly but carefully to avoid breaking the fruit up completely.
❦ serve warm with a sprinkle of desiccated coconut
❦ or ladle into a serving dish or individual serving cups
❦ sprinkle with coconut
❦ and allow to set.
❦ To hasten the process, refrigerate.

Variations

Instead of plums, use
• peaches
• apricots
• nectarines
• nashi
• blueberries
• strawberries

Instead of apple use
• pear

Add
• currants
• sultanas
• dried apricots
• dried apple
• rice malt

Instead of kuzu use
• arrowroot
• agar and allow to set

Instead of apple juice use

• red or white grape juice
• apple and strawberry juice
• apple and peach juice

Serving Suggestions

• refreshing on sultry autumn days
• delicious served warm with hot tea on cooler autumn nights

Planned-overs

✱ this makes a large amount so is perfect for the following day!
✱ Spoon over hot breakfast porridge
✱ Or ladle hot porridge over fruit mixture to warm through
✱ top with a crumble mixture and place in a hot oven to warm through
